I LOVE guac! Being in Mexico recently has me in the avocado/cilantro-lovin’ mood, and honestly, I can’t think of a better, more nourishing snack than fresh guacamole.
I’ve been cutting up fresh veggies like green and red peppers, carrots, and celery to enjoy with my guac. It also makes a great topping for meats like grilled fish, and cilantro-lime baked chicken.
Enjoy this high-fat, healthy snack this spring and experience the benefits of glowing skin, happy hormones, and my favorite, taste-buds that want to party with the traditional flavors of Mexico!!
- 3 small, ripe avocados (you want them to be a little tender, but not squishy)
- 2 Roma tomatoes, diced
- 1/4 white onion, finely chopped
- 2-3 cloves garlic, minced
- 1/2 bunch cilantro, finely chopped
- 1 tbsp. fresh lime juice
- 1/2 tsp. sea salt
- Sea salt and pepper to taste
In a medium size mixing bowl combine the cilantro, and garlic. Using a large spoon, crush the garlic and cilantro to release the aromas and flavors. If you have a mortar and pestle, that will work great for this first part, but you can get away with using a spoon.
Next add the tomatoes, lime juice, sea salt, and onions and mix them all together so the juices begin to blend.
Last, add the avocados. I like to halve them and slices them length-wise a few times to make them easier to mash in. Mix everything together and enjoy your fresh, nutritious, super-flavorful guacamole!
