1 whole organic lemon
1/4 c. first cold-pressed, unrefined organic coconut oil (Nature’s Way is my preferred brand)
1 c. unsweetened coconut flakes
pinch sea salt
Throw all ingredients into a Vitamix or other high-speed blender and mix into an even paste. Put small bites into tiny muffin-cups, refrigerate, and enjoy as a high-fat breakfast or high-energy snack!
